Tiganites of Skafidia (traditional Greek pancakes with honey)

Ingredients

1st mixture

400g milk

30g granulated sugar

2 eggs

A little salt

2nd mixture

270g strong flour

50g fine semolina

Garnishing ingredients

Honey or molasses

Nuts

Cinnamon, grated

Method

Whisk the ingredients of the 1st mixture until homogenized. Then slowly add the flour and the semolina and stir continuously. Leave to rest, strain, and it’s ready.

Heat a non-stick frying pan, use a mixing spoon to pour the mixture into the pan, then use a cutter to shape the pancake, remove the cutter and cook both sides. Remove from the heat and serve with honey or molasses, walnuts and grated cinnamon.

A few words...

Tiganites are one of the simplest Greek sweet treats and at the same time one of the most delicious. As their name in Greek denotes, they are made exclusively in the pan, and also they are small-sized, crispy on the outside and soft on the inside. Children love them and prefer them for breakfast, just like the ancient Greeks did – the ancient Greek name was “tiganitis” or “taginias”, from the word “taginon”, which means frying pan.
