Kagianas (scrambled eggs with tomato) with smoked pork

Ingredients

    • • 100g smoked pork, sliced into strips

      • 70g kefalograviera cheese, cut into quarters (saganaki fried cheese)

      • 3 eggs

      • 2 ripe tomatoes

      • Olive oil

      • Salt

      • Pepper

Method

In a frying pan, sauté the smoked pork and a little olive oil, and add the grated tomatoes. Sauté until all liquid has evaporated.

Then add salt and pepper and the homogenized eggs. Stir continuously until thickened, and then add the saganaki fried cheese. Serve with fresh thyme.
