Kagianas (scrambled eggs with tomato)

Ingredients

    • • 2 ripe tomatoes
    • • 3 eggs

      • 70g feta cheese

      • Olive oil

      • Salt

      • Pepper

Method

Grate the tomatoes and put them in a frying pan along with a little olive oil, and sauté until all liquid has evaporated.

Then season with salt and pepper and add the homogenized eggs. Stir continuously until thickened and then add pieces of feta cheese.

Serve with fresh mountainous oregano and drops of olive oil.

A few words...

Kayanas is a simple summer food, which is very popular in the Peloponnese and especially loved by children. Its name probably derives from the Turkish word “kaygana”, which means scrambled eggs. Kayanas is a combination of eggs with tomato, and sometimes onion, potato and other vegetables. It is also made with salt pork or cheese (feta cheese, sfela cheese).

In other regions of the country, the corresponding dish is called “strapazzada” (from the Italian word “strapazzare”, which means to beat, to scramble), and consists mainly of eggs with tomato, sometimes with a little cheese too.
