Trahanas (traditional Greek pasta) soup

Ingredients

200g sweet trahanas pasta

300g feta cheese, cut into pieces

60-80g cow butter

350g milk

1000g water

Salt

Pepper

Method

Add the feta cheese to the milk and leave it for 5-6 hours.

Strain the feta cheese. Put the milk and the trahanas pasta in a saucepan and when it boils, add the water, salt and pepper. Boil the trahanas pasta for 10-15΄.

Remove from the heat and add the butter and feta cheese, stir and serve the trahanas soup warm or lukewarm. When served lukewarm, the soup may need a little extra water.

A few words...

The word tragos or traganos that we meet in ancient Greek texts has turned to the word trahanas nowadays, signifying the traditional homemade pasta that is made with the simplest ingredients: flour, eggs and milk. Nourishing, warming and tonic, it fed and raised generations after generations in Greece, especially after the Second World War. They used to eat it for breakfast too, since it kept the whole family feeling full for many hours. It comes in different varieties: sour or sweet, thick or fine.
